Hapag offers a tasting menu that features a wide variety of local vegetables, fish & seafood, some meat courses, and locally inspired desserts. Please plan three to four hours for your dinner. With advance notice, we will gladly adjust the menu to accommodate certain dietary restrictions. Our offerings may vary as we practice sustainability cooking and use local produce as much as possible.
KEVIN NAVOA
Kevin is a graduate of Culinary Arts at KDU University College Kuala Lumpur and has worked with Darren Teoh of Dewakan Restaurant in Kualar Lumpur, Malaysia. He was also a part of the Las Flores Restaurant team for the famous La Lola Group in Manila, Philippines.
KEVIN VILLARICA
Kevin is a graduate of At-Sunrice GlobalChef Academy, Singapore and International School for the Culinary Arts and Hotel Management, Manila. He started as a chef for an in-flight catering company and opened several restaurants with Minor Food Group, Singapore before he decided to return to Manila and join Hapag Private Dining.
THIRDY DOLATRE
Thirdy is a graduate of the Center for Culinary Arts, Manila. He started his career working for Rational International and worked as a commis for several restaurants in Manila including the famous Wildflour group of restaurants. He also got the opportunity to work with Corey Lee in his three-Michelin star restaurant Benu in San Francisco.
